Harvested in the salt marshes of Noirmoutier, a small island off France’s Atlantic coast, this fleur de sel is renowned for its immaculate, snow-white crystals: the whitest of all French sea salts.

Often called the ‘queen’ of French fleurs de sel, it delights with its fine, uniform crystals, which are slightly moist and delicately crisp. On the palate, its fresh, pure salinity reveals subtle marine notes and a hint of sweetness. Direct at first, it gradually softens, leaving an elegant, delicate, lingering finish. A fleur de sel of remarkable purity that can enhance even the simplest dishes.

Awarded one star at the Great Taste Awards 2020.

Noirmoutier fleur de sel is available in two sizes: a 100 g jar, supplied with a wooden spoon, and an 80 g jar, without a spoon.

Add it just before serving to bring out and enhance the natural flavours of your dishes. Perfect on seafood, roasted vegetables, grilled meats or simply warm, crusty bread with butter.

On the island of Noirmoutier in Vendée, our fleur de sel is harvested by passionate salt workers at a site with 40 traditional salt pans known as œillets. Continuing an ancestral craft, they gently gather the crystals by hand using a traditional wooden fleur de sel rake. The fleur de sel is then neither washed nor treated, but dries naturally in the sun, preserving its purity and natural qualities.

Noirmoutier’s salt-making tradition goes back centuries: in 674, the monk Saint Philbert settled on the island, founded a monastery and organised the harvesting of its salt marshes. Today, the island’s salt workers keep this long heritage alive, guided by the rhythms of the ocean, sun and wind.

Our quality charter

It took two years to find and select the finest fleur de sel. We work only with artisan salt harvesters who follow three rules without exception: harvesting by hand with a traditional fleur de sel rake, natural drying in the sun, no additives or processing.

It is a craft passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine — none of it can be industrialised.

Storage

Since 2018, salt and fleur de sel have required neither a use-by date nor a best-before date: salt is a 100 % natural product long used as a preservative. You can therefore enjoy it indefinitely.

Simply keep the pot away from moisture to preserve all its qualities. The cork stopper allows the salt to breathe.

Delivery and returns

Orders prepared within 1 to 3 working days. Delivery to mainland France and Europe within 3 to 6 working days.

You have 14 days after receipt to notify us of a return. The product must be returned intact in its original packaging.

The farmers of the sea

A craft, not a production line

Becoming a salt harvester is, above all, a vocation born of passion, passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine.

We have chosen artisans who remain fascinated by nature and know how to work with both sea and land. Their harvest is of such quality that, once the salt has been gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is harvested by hand. Richer in minerals, its crystals are more delicate and its flavour far less harsh than ordinary salt: it crunches between the teeth before melting on the tongue.

When should I add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals dissolve and lose their crunch — the very quality that makes them special.

Why does the flavour vary from one place of origin to another?

Because sunshine, wind and the nature of the salt pans directly affect the crystals. Fleur de sel from Guérande has a subtle violet aroma; mountain fleur de sel, harvested from underground salt springs, has a more mineral character.

How long does it keep?

Indefinitely. Since 2018, salt has required neither a use-by date nor a best-before date. Simply keep the pot away from moisture.

Is the pot reusable?

Yes. The ceramic pot is handcrafted in Portugal and has a cork stopper. It is designed to sit on the table and be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please email us at sales@les-terres-blanches.fr.
