Our standards
Our quality charter
Driven by a passion for flavour, craftsmanship and gastronomy, we spent two years finding and selecting the finest fleur de sel. These are the four principles on which we will not compromise.
Step 1
Choosing artisans, not suppliers
It took two years to find and select the finest fleur de sel. We chose salt harvesters who are passionate about their craft, still fascinated by nature, and able to understand and cultivate both sea and land.
Not one was selected on price: each was chosen for the way they harvest.
Harvesting with a fleur de sel rake
A large wooden rake gathers the crystals from the water’s surface without breaking the grains. It is the only tool used, and it has not changed.
A craft passed down from generation to generation, in which the weather matters as much as technique — just as it does for a fine wine.
Step 3
Drying in the sun, and nothing else
The salt dries naturally in the wind and sun. No forced drying, no speeding up the process.
That is what preserves the crystal’s crunch: it crunches between the teeth, then melts on the tongue.
Never adding anything
The care taken in harvesting by hand means that, once the salt has been gathered, nothing more is needed: no additives, no processing.
The result is a 100% natural, artisan product.
A product that needs nothing else
Three rules, upheld without exception for salt from every origin.
100% natural
Nothing but salt, just as it comes from the salt marsh.
0% additives
No anti-caking agents, no preservatives, no flavourings.
0% processing
No washing, no grinding, no forced drying. The crystal remains whole.
