A refined pairing of two exceptional ingredients from France.

Noirmoutier salt is harvested in the Atlantic salt marshes using time-honoured methods, preserving its pure, mineral-rich texture and luminous white appearance.

Black Périgord truffle (Tuber melanosporum), from south-western France, is harvested in winter, with its peak season running from December to March. It is regarded as one of the world’s most prestigious truffles.

The Noirmoutier salt & Périgord truffle blend unites the purity of the sea with the mysterious depth of the forest, creating a finishing salt prized for its intense aroma and earthy complexity.

Ingredients: Noirmoutier salt 99 %, dehydrated Périgord truffle (Tuber melanosporum) 1 % (equivalent to 10 % fresh truffle), natural flavouring.

50 g jar, supplied with a wooden spoon.

This pairing enhances foie gras, fine cuts of meat and fish. It also lends an elegant touch to pasta, omelettes and scrambled eggs.

On the island of Noirmoutier, off France’s Atlantic coast, salt is harvested by hand from the salt marshes using time-honoured techniques that preserve its purity and natural richness.

In the Périgord, in the heart of south-west France, the black truffle Tuber melanosporum is harvested in winter, when its aroma reaches its full intensity. This creation brings together two emblematic French terroirs, combining the fresh mineral character of Noirmoutier salt with the aromatic depth of Périgord black truffle.

Paludier récoltant la fleur de sel à la lousse à fleur

The farmers of the sea

An artisan’s craft, not a production line

Becoming a salt harvester is, above all, a vocation driven by passion, passed down from generation to generation. The weather and the harvesting technique matter as much as they do in making a fine wine.

We have chosen artisans who remain fascinated by nature and know how to understand and tend the sea and the land. Their harvest is of such quality that, once the salt has been gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is harvested by hand. Richer in minerals, its crystals are more delicate and its flavour far less harsh than ordinary salt: it has a gentle crunch before melting on the tongue.

When should I add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals dissolve and lose their crunch — the very quality that makes them special.

Why does the flavour vary by origin?

Because sunshine, wind and the nature of the salt ponds directly influence the crystals. Fleur de sel from Guérande has a subtle violet aroma; mountain fleur de sel, harvested from salty underground springs, has a more mineral character.

Is the jar reusable?

Yes. The ceramic jar is handcrafted in Portugal and has a cork stopper. It is designed to remain on the table and to be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please email us at sales@les-terres-blanches.fr.
