Sometimes called the ‘Venice of Portugal’, Aveiro charms visitors with its network of picturesque canals travelled by moliceiros, colourful boats once used to harvest seaweed and now used for cruises. A stroll along the quays reveals remarkable Art Nouveau houses, some of which house a museum dedicated to tiles in this style. Nearby lies the old fishermen’s quarter, with its charming houses tiled from floor to ceiling.

It is here, in this evocative setting, that Aveiro fleur de sel is produced, harvested by hand by local artisans. It is presented in an elegant ceramic jar, sealed with a natural cork lid and decorated with a design inspired by the famous blue azulejos found throughout the city.

Delicate and versatile, Aveiro’s flor de sal pairs particularly well with desserts and sweet-and-savoury combinations. Just a few crystals can also enhance quinoa dishes or add a refined finishing touch to foie gras.

In the traditional salt pans of Aveiro, in northern Portugal, fleur de sel forms naturally on the surface of the pools through the action of sun and wind. Delicately harvested by hand by local artisans, it carries on a centuries-old craft closely bound to the region’s history and landscape.

Our quality charter

It took two years to find and select the finest fleur de sel. We work only with artisan salt harvesters who follow three rules without exception: harvesting by hand with a fleur de sel rake, natural drying in the sun, no additives or processing.

It is a craft passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine — none of it can be industrialised.

Storage

Since 2018, salt and fleur de sel have required neither a use-by date nor a best-before date: salt is a 100% natural product long used as a preservative. You can therefore enjoy it indefinitely.

Simply keep the pot away from moisture to preserve all its qualities. The cork stopper allows the salt to breathe.

Delivery and returns

Orders are prepared within 1 to 3 working days. Delivery to mainland France and Europe takes 3 to 6 working days.

You have 14 days after receipt to notify us of a return. The product must be returned intact in its original packaging.

The farmers of the sea

A craft, not a production line

Becoming a salt harvester is, above all, a labour of love, passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine.

We have chosen artisans who remain fascinated by nature and know how to understand and cultivate both sea and land. Their harvest is of such quality that, once the salt is gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is harvested by hand. Richer in minerals, its crystals are gentler and its flavour far less harsh than ordinary salt: they crunch between the teeth before melting on the tongue.

When should I add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals melt and lose their crunch — the very quality that makes them special.

Why does the flavour vary from one place of origin to another?

Because sunshine, wind and the nature of the salt pans directly affect the crystals. Fleur de sel from Guérande has a delicate violet aroma; mountain fleur de sel, harvested from underground salt springs, has a more mineral character.

How long does it keep?

Indefinitely. Since 2018, salt has required neither a use-by date nor a best-before date. Simply keep the pot away from moisture.

Is the pot reusable?

Yes. The ceramic pot is handcrafted in Portugal and has a cork stopper. It is designed to stay on the table and be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please write to us at sales@les-terres-blanches.fr.
