Harvested in the salt marshes of Île de Ré, on France’s Atlantic coast, this fleur de sel, nicknamed ‘white gold’, is produced in an exceptional natural setting.

Its beautiful, immaculate white crystals have a delicate crunch and melt gradually in the mouth. Its perfectly balanced salinity is both generous and gentle, never harsh, revealing subtle marine notes and a rich mineral character. Pure, natural and refined, it brings depth and elegance to dishes and pairs equally well with savoury and sweet creations.

Awarded 2 stars at the Great Taste Awards 2021.

Île de Ré fleur de sel is available in two sizes: a 100 g jar, supplied with a wooden spoon, and an 80 g jar, without a spoon.

Sprinkle it over your dishes just before serving to bring out their aromas and add a delicate crunch. Ideal on grilled meats, vegetables, salads, eggs or even chocolate desserts.

On Île de Ré, fleur de sel is harvested by hand in salt marshes shaped by centuries of tradition. Here, the salt harvesters, true “farmers of the sea”, carry on an ancestral craft while protecting an exceptionally rich marine environment.

At the surface of the salt pans, delicate crystals are gathered by hand using a fleur de sel skimmer, then dried naturally in the sun. No additives, no processing: just the work of the sea, sun and wind. A harvest deeply rooted in the island’s heritage and respectful of its natural balance.

Our quality standards

It took two years to find and select the finest fleur de sel. We work only with artisan salt harvesters who follow three rules without exception: harvesting by hand with a fleur de sel skimmer, natural drying in the sun, no additives or processing.

It is a craft passed down from generation to generation. The weather and the harvesting technique matter as much as they do for a fine wine — none of it can be industrialised.

Storage

Since 2018, salt and fleur de sel have required neither a use-by date nor a best-before date: salt is 100% natural and has long been used as a preservative. You can therefore use it indefinitely.

Simply keep the pot away from moisture to preserve all its qualities. The cork stopper lets the salt breathe.

Delivery and returns

Orders are prepared within 1 to 3 working days. Delivery to mainland France and Europe takes 3 to 6 working days.

You have 14 days after receipt to notify us of a return. The product must be returned intact in its original packaging.

The farmers of the sea

A craft, not a production line

Being a salt harvester is, above all, a labour of love, passed down from generation to generation. The weather and the harvesting technique matter as much as they do for a fine wine.

We have chosen artisans who remain fascinated by nature, who understand and cultivate both sea and land. Their harvest is of such quality that, once the salt has been gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is harvested by hand. Richer in minerals, its crystals are softer and its flavour much less sharp than ordinary salt: it crunches between the teeth before melting on the tongue.

When should you add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals dissolve and lose their crunch — the very quality that makes them special.

Why does the flavour vary by origin?

Because sunshine, wind and the nature of the salt pans directly affect the crystals. Fleur de sel from Guérande has a faint violet aroma; mountain fleur de sel, harvested from saline underground springs, has a more mineral character.

How long does it keep?

Indefinitely. Since 2018, salt has required neither a use-by date nor a best-before date. Simply keep the pot away from moisture.

Is the pot reusable?

Yes. It is a handcrafted ceramic pot made in Portugal, with a cork stopper. It is designed to sit on the table and be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please write to us at sales@les-terres-blanches.fr.
