Italian fleur de sel is harvested in the Trapani salt pans along the Sicilian coast. More exposed to sea winds, these salt pans experience faster natural evaporation, giving the salt a slightly more intense and complex aroma that reflects its windswept origins.

Our Italian fleur de sel celebrates the essence of an Italian summer: sun-drenched coasts, long Mediterranean lunches and the art of bringing out the best in simple, seasonal ingredients. Harvested by hand and naturally sun-dried, this delicately floral salt is ideal for finishing dishes.

The jar’s deep olive-green glaze evokes the timeless beauty of Italy’s olive groves, where centuries-old trees cover sunlit hills, their silvery leaves shimmering in the Mediterranean breeze. Designed to preserve and elevate the ritual of seasoning, this jar brings the warmth and richness of Italy’s culinary landscape to the table.

Italian fleur de sel is available in two sizes: a 100 g jar, supplied with a wooden spoon, and an 80 g jar, without a spoon.

A few crystals in fine Italian olive oil, served with good bread, are enough to appreciate its delicacy. This fleur de sel also brings out the flavours of Italian cooking beautifully: pasta, sauces, sun-ripened tomatoes, mozzarella or burrata. A simple, generous finishing touch in the true Mediterranean spirit.

On the western coast of Sicily, fleur de sel is harvested in the Trapani salt pans, within the Trapani and Paceco Salt Pans Nature Reserve. In this protected setting, sun, wind and seawater naturally give rise to the precious salt crystals. The harvest continues a traditional craft deeply connected to the history and landscapes of this part of Sicily.

Our quality charter

It took two years to find and select the finest fleur de sel. We work only with artisan salt harvesters who follow three rules without exception: harvesting by hand with a traditional fleur de sel rake, natural drying in the sun, no additives or processing.

It is a craft passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine — none of it can be industrialised.

Storage

Since 2018, salt and fleur de sel have required neither a use-by date nor a best-before date: salt is a 100 % natural product long used as a preservative. You can therefore enjoy it indefinitely.

Simply keep the pot away from moisture to preserve all its qualities. The cork stopper allows the salt to breathe.

Delivery and returns

Orders prepared within 1 to 3 working days. Delivery to mainland France and Europe within 3 to 6 working days.

You have 14 days after receipt to notify us of a return. The product must be returned intact in its original packaging.

The farmers of the sea

A craft, not a production line

Becoming a salt harvester is, above all, a vocation born of passion, passed down from generation to generation. The weather and harvesting technique matter as much as they do for a fine wine.

We have chosen artisans who remain fascinated by nature and know how to work with both sea and land. Their harvest is of such quality that, once the salt has been gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is harvested by hand. Richer in minerals, its crystals are more delicate and its flavour far less harsh than ordinary salt: it crunches between the teeth before melting on the tongue.

When should I add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals dissolve and lose their crunch — the very quality that makes them special.

Why does the flavour vary from one place of origin to another?

Because sunshine, wind and the nature of the salt pans directly affect the crystals. Fleur de sel from Guérande has a subtle violet aroma; mountain fleur de sel, harvested from underground salt springs, has a more mineral character.

How long does it keep?

Indefinitely. Since 2018, salt has required neither a use-by date nor a best-before date. Simply keep the pot away from moisture.

Is the pot reusable?

Yes. The ceramic pot is handcrafted in Portugal and has a cork stopper. It is designed to sit on the table and be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please email us at sales@les-terres-blanches.fr.
