Harvested in the sun-drenched salt marshes of the Camargue in southern France, these Mediterranean salt crystals are renowned for their distinctive, large grains. Bold and full of character, they bring texture and depth to your culinary creations.

The delicate grey-to-pink hue of this salt comes from the natural presence of tiny pink brine shrimp (Artemia salina), which also give flamingos their colour.

A true expression of its terroir, Camargue salt brings both visual beauty and mineral intensity to your table: an authentic gift from one of France’s most iconic nature reserves.

Camargue fleur de sel is available in two sizes: a 100 g jar, supplied with a wooden spoon, and an 80 g jar, without a spoon.

With its briny flavour, subtly reminiscent of oysters, this salt is ideal as a finishing touch. It enhances seafood, fresh oysters, grilled fish and even simple ingredients such as ripe tomatoes or steamed potatoes.

In the heart of Camargue, in southern France, fleur de sel forms naturally on the surface of the salt marshes under the Mediterranean sun and wind. This region of vast, wild landscapes offers particularly favourable conditions for seawater to evaporate and generous crystals to form.

Delicately harvested from the surface of the salt pans, the crystals are distinguished by their naturally greyish-pink hue, characteristic of Camargue’s saline waters, and their intensely briny character.

Our quality standards

It took two years to find and select the finest fleur de sel. We work only with artisan salt harvesters who follow three rules without exception: harvesting by hand with a fleur de sel skimmer, natural drying in the sun, no additives or processing.

It is a craft passed down from generation to generation. The weather and harvesting technique matter just as much as they do for a fine wine — none of it can be industrialised.

Storage

Since 2018, neither salt nor fleur de sel has required a use-by or best-before date: it is a 100% natural product, long used as a preservative. You can therefore enjoy it indefinitely.

Simply keep the pot away from moisture to preserve all its qualities. The cork stopper allows the salt to breathe.

Delivery and returns

Orders are prepared within 1 to 3 working days. Delivery to mainland France and Europe takes 3 to 6 working days.

You have 14 days after receipt to notify us of a return. The product must be returned intact in its original packaging.

The farmers of the sea

A craft, not a production line

Becoming a salt harvester is, above all, a vocation born of passion, passed down from generation to generation. The weather and harvesting technique matter just as much as they do for a fine wine.

We have chosen artisans who remain fascinated by nature, who know how to understand and cultivate both sea and land. Their harvest is of such quality that, once the salt has been gathered, nothing more is needed.

Your questions, our answers

What is the difference between fleur de sel and table salt?

Fleur de sel is the fine layer of crystals that forms on the surface of salt marshes; it is gathered by hand. Richer in minerals, its crystals are more delicate and its flavour much less harsh than ordinary salt: it crunches between the teeth before melting on the tongue.

When should I add it to a dish?

Always at the last moment, just before serving. During cooking, the crystals dissolve and lose their crunch — the very quality that makes them special.

Why does the flavour vary by origin?

Because sunshine, wind and the nature of the salt pans directly affect the crystals. Fleur de sel from Guérande has a faint violet aroma; mountain fleur de sel, harvested from salty underground springs, is more mineral in character.

How long does it keep?

Indefinitely. Since 2018, salt has required neither a use-by date nor a best-before date. Simply keep the pot away from moisture.

Is the pot reusable?

Yes. The ceramic pot is handmade in Portugal and has a cork stopper. It is designed to remain on the table and to be refilled.

Do you deliver outside France?

Yes, throughout Europe, within 3 to 6 working days. For destinations outside Europe or orders over 10 kg, please write to us at sales@les-terres-blanches.fr.
